Quinoa Fried Rice

So I have to say, I’m pretty proud of myself for making this.  I’ve never been a great cook, but after surviving most of the past year on my college cafeteria’s far too frequent “stir fry days”, I felt confident enough to make my own, hopefully better, variation. I added chicken and egg to this recipe, but it could be easily modified to be either/both vegetarian and/or vegan.

I’m gonna be honest, I didn’t really measure any of the ingredients, so you’ll have to bear with me…

First, coarsely chop:

  • broccoli
  • red pepper
  • carrots
  • green onion

While you are doing this, steam some edamame.  You can either do this in the microwave or a boiling pan (microwave is obviously easier).  Next, prepare the quinoa.  I had already prepared quinoa a few days before, so all I had to do was reheat it.

Then, add everything to a pan with olive oil.  Continue to stir the ingredients, and add dashes of soy sauce (preferably the low sodium version) as you go.  I also added about a teaspoon of chopped garlic for flavor.

Turn the heat down low, and in a different pan scramble one egg.  Once it’s cooked, toss it in with the quinoa and veggies.  After this, I added a few pieces of pulled chicken, heated it for a few more minutes, and chucked it into a bowl.

Feeds either one very hungry person or two normal people. 🙂
